Time: 10 minutes Serves: 6 Ingredients:
1 medium ripe avocado
1/3 cup fresh lemon juice
1 cup water
1 cup fresh parsley tightly packed
1 cup fresh basil leaves tightly packed
1/4 cup fresh chives
1 clove garlic
1/2 tsp salt (more to taste)
Dash of pepper
1/4 cup fresh white onion or 2 tsp onion powder (optional)
Zest from half a lemon (optional)
Instructions:
Blend all ingredients in blender for a smooth consistency, adding more water if you want it thinner.
You can also use a food processor for a more pesto like minced consistency.
Blend all ingredients together completely and enjoy over salads, potatoes, pasta, or wraps.
